Dexter-Russell 06123 Skinning Knife

The Dexter-Russell 06123 is an 11 inch skinning knife built for butchery and food-preparation tasks. Its curved stainless-steel blade and white sanitary polypropylene handle suit professional kitchens and home users who process meat regularly.

Thermals noise and power draw

As a manual cutting tool the knife generates no heat, noise or electrical draw during use. Performance depends entirely on the operator's technique and the maintenance of the 6 inch blade edge.

Build fit and freedoms

The knife requires a stable cutting surface and periodic sharpening to maintain its curved blade geometry. It frees the user from powered equipment for skinning tasks and fits standard knife storage or wall racks. NSF certification supports compliance in commercial food-service environments.

Questions about this item

How do I mount the 11 in skinning knife securely, and what step do people skip?

The knife ships ready to use with no mounting required; the step users skip is washing the stainless steel blade and Sanitary Polypropylene handle before first contact with food.

What part of the Dexter-Russell 06123 will need replacement after heavy daily use?

The 6 in curved stainless steel blade will dull first and should be resharpened or replaced when the edge no longer cleanly separates skin from meat.

What limit appears first when the knife is used continuously on a processing line?

Operator hand fatigue from the 5 in handle grip typically arrives before the NSF certified materials show any degradation.
