All five holders look identical — is there any difference in capacity or voltage I should choose between?

Every holder is the same: it accepts two 1.5 V AAA cells wired in series for a 3 V output, so there is no capacity or voltage option to select.

The spec says maximum power should stay below 5 W and current below 2 A — what does that mean for my RC toy or drone?
