Wusthof Classic 8" Artisan Butcher Knife

The Wusthof Classic 8" Artisan Butcher Knife is a stainless steel chef's knife designed for professional and home kitchens. It features a hollow edge that reduces friction during slicing tasks. The blade measures 3.50 inches in height and weighs 0.69 pounds.

Hollow edge reduces food adhesion

The hollow edge creates small air pockets between the blade and food, preventing slices from sticking during repetitive cutting. This design change allows smoother motion when processing large proteins or dense vegetables. Stainless steel construction resists corrosion and maintains edge retention through heavy use.

Suited for butchery and bulk prep

This knife suits butchers, chefs, and serious cooks who regularly break down large cuts or process high volumes. The 8-inch blade length and hollow edge optimize throughput for these specific tasks. Buyers needing a nimble boning knife or a lightweight paring tool for detail work should look at something else.

Questions about this item

How often does the hollow-edge stainless steel blade need professional sharpening?

The hollow-edge design reduces food adhesion, so the blade stays sharp longer between professional sharpening sessions.

What limits continuous heavy chopping with this 8-inch butcher knife?

The 0.69 kg weight and 3.50 cm blade width provide balance, but extended heavy use fatigues the wrist before the edge dulls.

Does the stainless steel handle get hot or slippery during all-day prep?

The synthetic handle stays cool and maintains grip even when wet, with no heat transfer from the blade during prolonged use.
