Reading a set: place settings and pieces per setting

A flatware set is sized by place settings. A 20 piece set usually serves four with five pieces each: dinner fork, salad fork, knife, spoon and teaspoon. Check the pieces per setting in the listing, because a five or six piece setting covers a full meal while a three or four piece one may leave out the salad fork or teaspoon. Four-packs of dinner forks or spoons help you top up a set. Count your regular diners plus a few spares, and add serving pieces separately.

Stainless steel grades, weight and disposable packs

Most reusable flatware is stainless steel, and the grade shows in rust resistance and shine: 18/10 and 18/8 contain more nickel and resist spotting better than lower grades, and heavier pieces feel more balanced in the hand. Check that the set is dishwasher safe, and keep it away from silver-plated or wooden-handled items in the machine. Disposable plastic, bamboo and paper cutlery is sold in packs for gatherings, and heavyweight plastic holds up better with hot food.

Questions about Silverware and Flatware Sets

What does 18/10 stainless steel mean?
It is stainless steel with about 18 percent chromium and 10 percent nickel. That mix resists rust and staining and takes a good polish. Sets labeled 18/0 contain no nickel and are more prone to spotting.
Is it fine to wash flatware in the dishwasher?
Stainless steel generally is, but wash it apart from silver-plated or wooden-handled items. Do not leave wet pieces sitting in the machine, since standing moisture causes spotting. Hand wash anything with bamboo, wood or ceramic handles.
How many place settings do I need?
Match the number of regular diners and add a few spares, since forks and spoons go missing and a dishwasher cycle can leave you short. A service for eight covers a family with guests; add single packs of dinner forks or spoons for bigger gatherings.
