Which version of this KVM switch should I choose for my setup?

This model is a single 2-port version that connects two computers to one HDMI monitor and three USB 3.0 devices, and it comes with two HDMI 2.1 cables and two USB 3.0 cables included.

What does the 8K 60Hz rating mean when I connect it to my monitor?

The switch passes video up to 8K at 60 Hz and 4K at 120 Hz with HDR and 3D support, so your monitor will receive those resolutions and refresh rates if both the source and display support them.

How does the HDMI 2.1 interface limit what I can actually run?

HDMI 2.1 caps the video bandwidth to the levels needed for 8K 60 Hz or 4K 120 Hz, and the USB 3.0 ports are limited to 5 Gbps data transfer speed.
